This morning, you will be met at your hotel by Sebastien Lemoine, a French expert in Japanese Sake and fine dining. He will escort you to Chiba, a rural area just an hour from the city on public transport but a world away from the bright lights of Tokyo.
Sebastian will help translate and guide you through several facets of Japanese culinary style, which will begin with a visit to a small family-run sake brewery to witness the creation of this sacred drink, which has remained unchanged for hundreds of years. The brewery sits on the Boso coastline, an area little visited by western tourists which you will have some time to explore before settling into a local restaurant. Here, Sebastian will explain the local ‘terroir’ cuisine which has both French and Japanese influences. This ‘from the earth’ cuisine is based on healthy, organic produce and you will be able to enjoy a meal paired with exactly the right Sake to complete your experience, after which you will be escorted back to your hotel in the late afternoon.
